A Gluten Free Crowd Pleaser!

My pal, Heididoesn't have any specific reason to make gluten free treats.


But do you know what?


Whenever we get together, she ALWAYS makes sure there's a YUMMY
gluten-free dessert waiting for us.
This is one of the many reasons I love her.


Today I'm going to let her in one of her most delicious secrets.

My family and I, we’re lucky. 
Lucky because we live near Wendy and her family. We live near Tracy,KrisDonna and Stephanie, too, and we get to see them often. 
See what I mean by lucky?!
When we get together, there’s usually food involved. We all especially enjoy a good potluck.
For last summer’s potluck pool party, I converted one of my family’s favorite treats and made it gluten-free, and I think it’s safe to say that everyone enjoyed my Oreo and mint chocolate chip ice cream dessert.
I remember Mr. Rose asking me to give the recipe to Wendy. So, Jay, this post’s for you! :)
It’s a delicious crowd pleaser, perfect for summertime and so easy to make.

Oreo and Mint Chocolate Chip Ice Cream Dessert
1.5 quart mint chocolate chip ice cream
8 ounces Cool Whip
1 package of Oreos
Chocolate sauce (optional)
Crush Oreos. I like to use my food processor and pulse the cookies until crumbs form. If you don’t have a food processor, a plastic bag and a rolling pin work just fine. Set aside cookie crumbs.
Thaw Cool Whip. 
Soften the ice cream at room temperature. When ice cream has practically melted and feels soupy, but thick when stirred, pour it into a large mixing bowl. Fold in the Cool Whip.
In a 9x13-inch pan, spread 1/3 of the ice cream mixture. Top with 1/3 of the cookie crumbs. Repeat layers. 
Freeze for approximately 6 to 8 hours or until firm.
To serve, cut into squares. Drizzle with chocolate sauce.

Notes and variations:
To make this gluten-free, simply substitute 2 packages of GlutinoChocolate Vanilla Creme cookies for 1 package of Oreos. 
Real, fresh whipped cream may be substituted for the Cool Whip.
Other flavors of ice cream can be used.
A spring-form pan can be used.
Use regular Oreos, not double stuff. Chocolate Oreos would probably amp up the flavor though.
I’ve never served it with chocolate sauce. I’m sure a drizzle of warm sauce would be delicious. I mean what’s not to like about hot fudge? But the dessert is totally tasty without it, too.
This can be made a few days in advance and stored in the freezer.
