Gluten-Free Crescent Rolls -- YUM!

Last night, I decided I wanted to make cinnamon rolls in the crockpot for breakfast on Thanksgiving morning.  I've been watching my diet, and it was totally random, but...hey...it's THANKSGIVING, and I thought it would be SO nice to wake up to the smell of cinnamon rolls.

I was looking around for the perfect recipe, when I came across THIS one for Crockpot Apple Dumplings. That one sounded unique, so I changed my mind, and decided to make them instead.  Anyway, the recipe referenced THIS recipe for cresent rolls...

And I can't tell you how THRILLED I am to have found it.

This dough was easy to make, easy to work with, and easy to clean up.

Not to mention delicious.

I'm thinking dumplings for stew, pot pies, cinnamon rolls...add some Italian herbs to make a pizza/calzone crust???  There must be at least a million uses!

But I digress.

Here's our apple dumplings in pictures:

I made the dough around 8 pm, so I had to let it chill until 10 pm before rolling it out...by the way, I realize this isn't a perfect circle, but it's about as good as it gets around here :)


Then I wrapped each triangle around an apple wedge, and placed them back into the fridge, because it was too early to start the crockpot.  (PS - I made a double batch of the dough to have a total of 16 triangles.)


At 2 am, I was up testing Sugar's blood sugar...and piled them into the crock...


Added the rest of the ingredients...


They were ready at 7!  But we didn't get up until 8, so the sugar overcooked, and carmelized a bit.  Even still, they were mighty delish!

After breakfast, I made another batch so we could have some GF cresent rolls with our Thanksgiving dinner...

Crescent Rolls
1/2 stick butter (note – that is 1/4 cup), room temperature
3/4 cup small curd cottage cheese (I used sour cream instead.)
1 cup gf flour mix (I used Jules Gluten Free)
1 tsp xanthan gum (I omitted, because Jules already contains this ingredient)
1/8 tsp salt
1/4 tsp cream of tartar
1/2 tsp baking soda
1 TBS sugar
In the bowl of your mixer, combine the butter and cottage cheese. Add dry ingredients. Mix until a ball of dough forms.
Wrap in plastic wrap and chill at least 2 hours. 
Preheat oven to 350 degrees. On lightly floured piece of parchment paper, roll the dough into a 14 inch circle. Cut into 8 triangles (really easy with a pizza cutter).
Roll each triangle from wide end to tip, turning ends to form a crescent shape. Place on a baking sheet lined with parchment and bake 20 to 30 minutes.

  2. Wow. This looks like it could be a substitute for apple pie, just putting slices of apples with sauce on the bottom, then strips of dough latticed on top in the crock pot. To make a lower carb apple pie. You could even brown the crust under the broiler right in the crock pot, I think. Great idea!

  4. they look so YUMMY! I am clueless when it comes to crockpot dessert type things, so i was wondering if you would share with me how you would do cinammon rolls in there too!
